ERIEAU ONIONS

(Makes 6 servings)

We made this recipe in a pressure cooker.

12                    small, new cooking onions

1 cup (250 mL)            water

3 tablespoons (45 mL)            olive oil

1/2 teaspoon (2.5 mL)            salt

1/4 teaspoon (1.25 mL)            black pepper

The onions should be approximately 1 1/2 inches in diameter.

Peel the onions.  Place them in the pressure cooker pot.

Add the water.  Cover and seal.  Cook on high pressure for 4 minutes.

Release the pressure.  Drain the onions.

Place the onions in a bowl.

In another small bowl, combine the olive oil, salt, and pepper.  Mix well.

Pour the olive oil mixture over the onions.  Toss the onions to coat them with the olive oil.

Place the onions in the refrigerator for at least 1 or 2 hours.

Stir occasionally to keep the onions coated with the olive oil mixture.
